2 poached chicken breasts, chopped*
3 tbsp. light mayonnaise
3 tbsp. light sour cream
1/3 cup chopped celery
1/3 cup chopped walnuts
1/4 tsp. chopped flat parsley
2 South African oranges:
1 - segmented and lightly chopped, reserving juice
1 - zested, reserve 1/4 tsp. orange zest
pinch of salt and white pepper, to taste
pinch of cinnamon
Toss all ingredients in a bowl. Mix until thoroughly blended.
Serve inside Pita bread.
