1/2 cup chopped red onion
3 garlic bulbs, chopped
2 tsp. chopped cilantro
2 tsp. chopped flat parsley
2 tsp. chopped fresh thyme
5tbsp. olive oil
5 tbsp red wine vinegar
2 South African oranges (1 zested and juiced, 1 segmented)
1 - 1/2 pound beef loin top sirloin steak (boneless)
kosher salt and black pepper
1 South African orange (sliced)
Combine marinade ingredients. Place steak in a plastic container and season with salt and pepper.
Pour marinade over steak.
Place orange slices on top of steak.
Marinate for 24 hours.
Preheat: grill to highest heat. remove steak from marinade. Sear steak on each side for 2 1/2 minutes.
Reduce heat and grill an additional 4-5 minutes to serve rare, grill longer for medium or well.
Remove steak from grill and rest on cutting board for 5-10 minutes.
Place fresh orange slices on grill, turning after 2 minutes on each side.
Slice steak and serve with grilled oranges.
